What's Wrong With Tap Water?
While tap water is not necessarily bad for you, some studies have found that it can contain "forever chemicals" such as per- and poly-fluoroalkyl substances (PFAS) and other contaminants. Here's a closer look at the common ones:
- Forever chemicals: Exposure to forever chemicals has been linked to health problems like high cholesterol, thyroid disease, ulcerative colitis, and some cancers.
- Lead: In the same study that found forever chemicals in tap water around the U.S., researchers discovered 118 out of 120 samples of tap water they examined also had detectable levels of lead. Consuming high levels of lead can lead to kidney damage and nervous system problems for children and adults.
- Microplastics: Microplastics can be found in tap water. These absorb unwanted chemicals like pesticides, heavy metals, and polychlorinated biphenyls (PCBs). One study found that consuming microplastics can interact with our cells and stretch the membrane, which could lead to health problems.
- Arsenic: The tap water study discovered arsenic in 8% of samples. Long-term exposure to this chemical in drinking water is associated with cardiovascular problems, diabetes, and cancer.
- Pesticides and herbicides: These substances travel to treatment plants, often remaining untreated and entering our waterways.
Different water filters attempt to treat these contaminants through various processes, including the following:

- Reverse osmosis
- Granulated carbon filters
Filtered water pitchers are often only effective in treating chlorine. While the water might taste or smell better, these filters cannot protect you from harmful contaminants like mercury, lead, herbicides, and pesticides.
Reverse osmosis systems remove more contaminants, but they are inefficient and slow and waste 3-5 gallons of water for every gallon of filtered water they produce. They are also bulky, complicated, and limited by their filtered water reservoir.
Carbon is an excellent filter medium since it is natural, non-toxic, and environmentally friendly. It attracts contaminant particles and physically traps them. However, a loose collection of granular activated carbon (GAC) is generally ineffective since it doesn't force water to stay in contact with the carbon long enough to trap contaminants, and water can make a channel through the filter.
Additionally, filtered water is only useful if you use it in all parts of the kitchen. For instance, disposable water bottles might seem to be an improvement over tap water, but you likely wouldn't use them to wash off your fruits and vegetables. The same applies to water pitchers — you're unlikely to use them to cook your rice, pasta or beans. - NSF Protocol P231: Microbiological Purifier: This is a filter certification for the purification of microbiological contaminants, like viruses and bacteria.
